A Long Walk, Whole Foods and a Last-Minute Dinner Success

It was a beautiful NYC day yesterday. The perfect type of day for a walk.  So I left my office after work and embarked on a five mile walk to downtown Manhattan.  This walk took me past my very first apartment in New York, where I lived for 25 glorious days in the month of August, 2001. It was a small studio that I sublet from a girl who was the real-life Carrie Bradshaw.  She wasn’t LITERALLY Candance Bushnell, but she lived the life of the character.

I continued my walk downtown, heading towards the Tribecca Whole Foods, literally the most fabulous store that ever existed. Not just Whole Foods, but this particular Whole Foods.  It’s just like none other. Not crowded, bright, open, fabulous fruit and meat selection, and so, so many delicious prepared foods. And no, they did not pay me to say this. I just LOVE it there. (Although, my wallet does not, I will point that out.)

I was going to get chicken to make some chicken parm to have with some cheese ravioli I had at home.  With sauce from a jar. But the minute I walked in, I knew that wouldn’t do.  I spent about 30 minutes wandering around, trying to find inspiration for what to cook, and I finally did what I always do when I can’t decide what to eat: I called my mom and asked her.  I setteled on Shrimp Scampi, because its easy and I was PRETTY sure my sweet husband liked it.

I started with a stick of butter and 6 garlic cloves in a pan. I added my shrimp – 1 pound – after those two things were sizzling.

I cooked them, about 3 minutes on each side:

I sprinkled some bread crumbs over the shrimp, tossed it lightly in the skillet, and then tossed the mixture over this pasta, that my aunt had brought me back from Italy!

I squeezed some fresh lemon on top (about a whole lemon) over top and mixed that in, too.  I always make sure to toss the pasta with the sauce before serving so the sauce really sticks to the pasta!

We ate it with this lovely bread!

I ALSO picked up dessert from the dessert bar! Two chocolate brownies.  YUM.  Have you ever seen a dessert bar at your Whole Foods before? It made me SO happy! And, since the sweet husband didn’t eat his brownie (which I suspected he wouldn’t), I enjoyed it for breakfast this am. Even better.
